Twice Baked Potatoes

Description

These potatoes are loaded with all the things you want on a baked potato: sour cream, butter, bacon, cheddar cheese, and green onions and they are beautiful and baked to perfection to accompany any dinner you make! They are also a fabulous side dish on a holiday table!

  1. Preheat the oven to 350 degrees F.

  2. Wash your potatoes really good under running water, then pat dry. Place on a sheet pan and rub or spray with olive oil.  Bake potatoes in the preheated oven until tender, about 1 hour and 15 min, depending on the size of your potatoes. Set potatoes aside until cool enough to handle.

  3. Chop up all your bacon and cook until crispy in a heavy bottom pan.  Drain on paper towels.

  4. Once cool enough to handle, slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. Add sour cream, butter, cream, bacon, salt, pepper, 1 cup cheese, and the green onions to the potato; mash up and mix with a potato masher. IMPORTANT: This is when you want to taste the mixture. You may want to add more salt or butter or cream, etc.  Once you're happy with the taste, then spoon the mixture into the potato skins; top each with remaining cheese, bacon, and chopped fresh chives.

  5. Return potatoes to the oven and continue baking until the cheese is melted, about 20 minutes.
