Take your steaks out of the fridge at least 30 minutes before grilling them and place them into a large glass dish or on to a sheet pan.

Rub the steaks on both sides with extra virgin olive oil and garlic cloves ran through a garlic press or minced... about a full bulb's worth to cover both sides of the steaks.

Season both sides of the steaks with a generous amount of kosher salt and freshly ground black pepper.

Let the steaks sit out after you've dressed them until they get to room temperature. Fire up your grill as hot as it will go. Place your steaks on the grill and close the lid. Let the steaks cook for just a few minutes. Flip them over when they begin to get grill marks on the first side.

After grilling the steaks on the other side for a few more minutes, begin to check the internal temperature of your steaks with a meat thermometer, piercing the meat in the thickest part of the steak. Take it off the grill when it hits 130 degrees Fahrenheit for medium rare steak. It will continue to cook a bit on the platter as it rests. Let the meat rest for at least 15 minutes before serving.
