The Juicy Joe Burger

Like the man himself, this burger is juicy, sexy, and delicious! Two smash burgers with melty Havarti cheese, three strips of bacon, homemade Pico de Gallo, salty avocado, and crisp lettuce on a kaiser roll.  It's out of this world.

  1. Preheat oven to 400 degrees Fahrenheit. Lay your bacon strip halves on a sheet pan and bake in the oven for about 15 minutes or until it reaches your desired color and crispiness. Remove from the pan with tongs and drain on a wire rack.

  2. Mix together all the Pico de Gallo ingredients in a bowl and let sit in the fridge so the flavors can marry while you prepare the burgers.

  3. If grinding your own meat, cut the chuck roast into strips that you can easily feed into your meat grinder.  Measure out 4 ounce portions of the meat and form into loosely packed balls. Place on a sheet pan to be taken out to the grill.

  4. Heat your flat top grill or your grill with a griddle placed on the grates to high.  Using two spatulas, smash down each ball of ground meat onto a lightly oiled griddle (avocado spray) using your two spatulas stack on top of each other.  Once smashed, season the burgers with salt, pepper, and garlic powder. After only about a minute, flip the burgers and season on the other side.  Remove from the grill when they are cooked to your desired doneness.  Immediately top each burger with a slice of Havarti cheese. 

  5. Slice up an avocado and lightly salt the slices.  Grab your leaf lettuce. Toast your buns by lightly spraying them with avocado cooking spray and either place them briefly in the hot grill on a sheet pan or under the broiler in your oven until light golden brown.

  6. To assemble the burgers, start with the bottom bun and top it with one cheesy smash burger.  Top that burger with three half strips of bacon, then place another cheesy smash burger on top of the bacon. Next, lay down some leaf lettuce on top of the burgers, top the lettuce with some sliced, salted avocado, and then spoon on some delicious homemade Pico de Gallo.  Top the burger off with the toasted top bun and enjoy!
