Spicy Pasta Carbonara | RECIPE
This is a quick and easy way to make a creamy, delicious pasta carbonara while adding a little spice!
Chop your bacon and fry it up in a deep pan big enough to eventually hold the cooked pasta. While the bacon is frying, in a separate bowl, whisk together 2 whole eggs and 1 egg yolk. Add 3/4 cup of finely grated Parmesan cheese, stir. Wash and dry your fresh parsley, then chop it up. When the bacon is cooked and looking crispy, remove the pan from the heat. Using a pasta spoon, remove the pasta from the water (reserving the pasta water) and put it into the pan with the bacon. Stir the pasta up with the bacon. Next, add the egg and cheese mixture to the pan with the pasta and bacon and stir continuously so that the eggs do not scramble and instead create a smooth, creamy sauce coating the noodles. Take one ladle of the pasta water and add it to the pan with the pasta, thinning out the sauce a bit. Stir to incorporate. Add more grated Parmesan to your liking, the fresh parsley and lots of cracked black pepper. Stir to combine.
To serve, place your pasta in a bowl and top with a little more Parmesan cheese and finely diced jalapeño pepper. Enjoy!
