Loaded Mashed Potato Ballz | RECIPE
Turn your leftover mashed potatoes into a delicious appetizer that you won't be able to resist!
Mix together the cold mashed potatoes, cooked bacon, cheddar cheese, and green onions in a large bowl. Using a small ice cream scoop, divide the mashed potato mixture into even portions and form into balls on a sheet pan. Put the pan of mashed potato balls in the fridge to chill. Setup your breading station with one dish containing panko, salt, and garlic powder, a second bowl containing the beaten eggs, and a third bowl containing the flour. Bread each mashed potato ball dipping into the flour first, then the egg, then the panko bread crumbs. Do this until all mashed potato balls are breaded. Over med-high heat, bring your oil to a temp of 350 degrees Fahrenheit, then fry the breaded mashed potato balls in batches. Serve with a mixture of sour cream and sriracha.
