Shrimp Primavera Casserole

Description

Casseroles don't have to be boring! Here at Tara the Foodie, we're bringing back the casserole... but better! This Shrimp Primavera Casserole has delicious grilled shrimp and grilled zucchini and squash, and a creamy mushroom Parmesan sauce to pull everything together.  It's a perfect solution for a quick weeknight dinner!

  1. Dress the shrimp, sliced zucchini and squash with olive oil, salt and pepper. Grill until shrimp is just pink and veggies have gold brown grill marks. Chop up the grilled shrimp and veggies.

    Cook egg noodles according to package directions. Make sure you salt the water.

    In a large bowl, combine the soup, milk, 1 cup shredded parmesan cheese, Italian seasoning, frozen peas, and group pepper to taste. Add the chopped grilled shrimp and veggies and stir to combine.

    In a large glass baking dish that has been oiled or buttered, add the cooked egg noodles, then pour the shrimp and veggie mixture over the top. Stir to combine everything.

    Make the topping by melting 2 tablespoons butter and stirring in 1/4 cup breadcrumbs.

    Sprinkle 1/2 cup parmesan cheese over the top of the casserole, then sprinkle the breadcrumb and butter mixture over the top.

    Bake at 400 degrees Fahrenheit for 20 minutes or until hot and bubbly with the top beginning to brown.
