Roasted Brussels Sprouts with Bacon and Balsamic Glaze

Description

Deliciously caramelized roasted Brussels sprouts with crispy bacon pieces and drizzled with a homemade Balsamic glaze sweetened with a bit of honey.

Instructions

    • Cook your chopped bacon in a pan until it's 3/4 of the way done.
    • Spray a glass cooking dish with avocado spray and add the Brussels sprouts after you've cut off the ends and cut them each in half lengthwise.
    • Drizzle extra virgin olive oil all over the sprouts.
    • Add your cooked bacon.
    • Season with salt, pepper, and minced garlic.
    • Stir up the seasoned Brussels Sprouts in the dish.
    • Roast uncovered in a 350 degree oven for 25 minutes, or until the sprouts start to brown on top.
    • To make the glaze, bring 1 cup of Balsamic vineger and 1 tablespoon of honey to a boil, then reduce to a simmer and simmer until the vinegar reduces by half.  Pour reduced vinegar mixture to a small bowl and let cool to thicken.
    • Drizzle the Balsamic glaze over the Brussels sprouts after they come out of the oven before serving.
