Instructions

For the Pizza Dough

  1. In a small bowl or glass measuring cup, add the sugar and yeast to the water and stir. Let the yeast bloom for 10 minutes or until puffy looking on top.

  2. In a stand mixer, add the flour, salt, and milk powder and with the dough hook, mix to combine.

  3. Next add the yeast water to the flour mixture and mix on low (setting 2 or so) with the dough hook for about 10 minutes.  After one minute, add 2 tablespoons light olive oil while the mixer is still going.  Add an additional 1 or 2 tablespoons olive oil to the dough if it seems too dry as it's being kneaded by the mixer.  It should be soft and elastic after 10 minutes.

  4. After 10 minutes, remove the dough from the mixer and form into a ball.  Spray a large bowl with oil spray, then place the dough ball in the bowl and cover with a towel.  Let the dough rise for about 45 minutes to an hour.

For the Pizza Sauce

  1. While the dough is rising, make the pizza sauce!  In a pot over medium heat, add the tomato sauce, tomato paste, and all the seasonings and stir until combined and heated through.  Turn off the heat and set aside.

For the Parmesan Herb Crust Seasoning

  1. In a small bowl, mix together the Parmesan cheese and all the seasonings. Then mix in the melted butter.  Grab a basting brush and have it ready to use to apply this seasoning spread to the pizza crust.

For the Pizza

  1. In a 10" cast iron pan, add 2 tablespoons olive oil and swirl around to cover the pan on the bottom and on the sides.

  2. Take one of the dough balls and press it into the pan, making sure to have it go up the sides as well.

  3. Paint on 1/3 of the pizza sauce onto the dough.

  4. Add shredded mozzarella cheese (as much as you want!) and sliced pepperoni.

  5. Place in a 475 degree oven for about 13 minutes or until the dough is browning around the edges and the cheese and toppings are hot and bubbly.

  6. Remove pizza from oven and paint on the Parmesan Cheese Herb seasoning all over the crust.  Cut and serve!

  1. Al

The flour weight (grams)in the Pizza Hut dough?

  2. Marie

Do you think this pizza crust would work if I used a Gluten Free flour blend such as gfJules in place of the AP flour? I don’t have a cast iron skillet so will a regular Pizza Pan or Pizza Stone be okay? Thank you!

    • Tara the Foodie

I’ve never tried this but I think it would be worth a shot! If you don’t have a cast iron pan you could absolutely use any type of pizza pan or stone.

  3. Rob

I don’t make pizza dough any other way now! It’s perfect! Thank you!

That’s awesome to hear, Rob! Have a great day!

Absolutely took me back to Pizza Hut! You nailed it, will be on repeat especially during Lent on Fridays. Thank you 😊👍🏻

    Great! Have fun!

Hi Tara, I’m making this tonight. Should I use my pizza stone to place underneath the pan or does baking in the cast iron pans get the bottom crust crispy enough? Please let me know if I should use the stone, thanks so much.

    • Tara the Foodie

      Hi Kris,

The cast iron all by itself will work perfect. No need for the pizza stone. Enjoy!

I truly appreciate the speedy reply! I’ll be sure to leave a follow-up comment after dinner!! Thank you!

Hi Tara, I was watching your YouTube video last night and came here today, on your pizza dough the 2 extra pizza doughs you have left can you freeze them and bring out as needed ? Thanks for your time on my question.

    • Tara the Foodie

Hi Sherry! Yes, you can freeze the extra doughs! I like to put them in individual freezer bags and when you’re ready to use them, just let them thaw out on the counter until they are thawed and pliable and then just go to town and they will turn out just as good as the dough did the day you made it. Thanks for commenting and thanks for watching!
