
Baked Garlic Dill Salmon Sheet Pan Dinner

Prepare this delicious salmon dinner all on a sheet pan! Baked garlic dill salmon served with roasted sweet potatoes and broccoli. Healthy dinners never tasted so good!

Preheat oven to 425 degrees F. Line two sheet pans with aluminum foil or use a silicon mat. Spray one sheet pan lightly with cooking spray.

Peel the sweet potatoes, then cut them into bite-sized pieces. In a bowl, toss the potato wedges with olive oil, salt and pepper, then add to the sheet pan NOT coated with cooking spray in a single layer. Roast in the oven for 10 min.

In the same bowl you used for the sweet potatoes, toss the broccoli florets with olive oil, salt and pepper.

Lay your salmon filets out on the other sheet pan coated with cooking spray. Season all of the salmon with salt, pepper, minced/crushed garlic, and dill weed. Then place a pat of butter on top of each filet.

After the sweet potatoes have baked for 10 minutes, remove them from the oven and add the broccoli to the same pan. Toss the broccoli and sweet potatoes together.

Return the sheet pan with the sweet potatoes and broccoli back to the oven on the upper rack. Also place the sheet pan with the salmon into the oven on the lower rack. Bake until the salmon flakes easily with a fork, about 12-17 minutes. You may need to leave the sweet potatoes and broccoli in for a bit longer - I left mine in for an additional 15 minutes.
