Stuffed Pepper Soup
Description
This stuffed pepper soup is a cozy, comforting twist on the classic stuffed pepper we all love. A hearty combination of ground beef and Italian sausage is browned and simmered with bell peppers, onions, tomatoes, beef broth, and rice, creating a rich, savory soup that’s filling without being heavy. The rice cooks right in the broth, soaking up all that classic stuffed pepper flavor while keeping everything wonderfully cozy and satisfying.

Heat the olive oil in a large pot over medium high heat. Add the beef, sausage and onions and cook until the meats are cooked through and the onions are soft. Add bell peppers, garlic and red pepper flakes and sauté an additional couple minutes. Drain grease if necessary.

Add all remaining soup ingredients except cheeses.

Bring the soup to a boil. Once boiling, reduce heat to LOW and continue to simmer with the lid on for about 12 minutes or until the rice is cooked. It's really up to you how much you want to reduce the soup down from there. I like it to be like a thicker stew consistency.

Serve a couple ladles of Stuffed Pepper Soup into a bowl and top with grated Parmesan cheese and shredded mozzarella cheese and a sprinkle of parsley. Enjoy!Â
