Shrimp, Mushroom, and Onion Frittata | RECIPE

  1. Pre-heat oven to 400 degrees. Heat a cast iron pan over medium-high heat. In a small bowl, combine the raw shrimp, about a tablespoon of extra virgin olive oil, sea salt, black pepper, and smoked paprika all to taste. Add a clove of garlic pressed through a garlic press. Stir to combine the seasonings and oil with the shrimp, then add to the hot pan and cook until done (just a few minutes). Remove from pan. In the same pan, add some more olive oil and add your sliced mushrooms. Season with salt, pepper, and dried thyme. Cook for just a couple minutes until done. Remove from pan. Your shrimp should be cooled down now enough to cut them into bit sized pieces. Add a bit more olive oil back to your pan and add the shrimp and mushrooms back to the pan and also add your green onions. Stir to combine. Add your scrambled eggs, your dried basil and red pepper flake, and top with your shredded cheese. Place the pan in the oven for about 10 minutes to finish cooking. Your frittata will puff up a bit, but will fall again after a couple minutes. Cut your frittata into four pieces and serve with a side salad.
