Quesadilla Burger
Description
I’m recreating a fan favorite from Applebee's menu called the Quesadilla Burger. This original burger creation comes piled high with Pepper Jack cheese, Mexi-ranch sauce, crispy bacon, homemade Pico de Gallo and shredded lettuce in a warm, crisp cheddar quesadilla. Combining the best elements of a juicy burger and a cheesy quesadilla, this dish offers a delectable blend of textures and tastes.
For the Mexi-Ranch Sauce

Instructions

Combine all the Mexi-Ranch ingredients into a bowl and whisk until smooth. Set aside.

Add all the Pico de Gallo ingredients in a separate bowl and stir to combine. Set aside.Â

Fry up your bacon strips and drain on paper towels.

Create 5 - 6oz. large thin burger patties and season both sides of each patty with salt and pepper. Fry them all up until cooked to your desired temp (medium-well to well).Â

Place two slices of pepper jack cheese on top of each cooked burger.

Clean out your pan, then spray your pan with cooking spray. Over medium-high heat, place a tortilla in the pan, then top with about 1/2 cup of shredded cheddar cheese. Cook until golden brown on bottom, then remove cheesy tortilla from pan. This will be your "top bun".

Spray your pan again and add another tortilla to the pan. Top with another 1/2 cup of cheddar cheese. Add 1/2 cup shredded lettuce, some of the Mexi-Ranch sauce, then place one of the cheeseburger on top of that, then two strips of cooked bacon on top of the burger, then top with some of the Pico de Gallo, then top it all with the other cheesy tortilla, cheese-side down. Cook until the bottom of bottom tortilla begins to become golden brown.

Slide your Quesadilla Burger out of the pan and on to a cutting board. Cut in half to serve.
