Pulled Pork Tater Pie
Description
You take a baked potato, smash it down in a pie tin, top it with baked beans, pulled pork, cheddar cheese, and cover it with foil. Pack your prepped Tater Pies up and head on over to the campground.
When you’re ready for dinner, just throw ‘em on the grill or over the campfire to heat them through. Once they’re hot and the cheese is melted, open the foil top and add some chopped green onions and an extra drizzle of BBQ sauce.

Preheat your oven to 400° F

Wash your potatoes and keep the skins on. Poke each potato several times with a sharp knife. Rub each with olive oil, then season generously all over with kosher salt. Bake the potatoes for 60 minutes or until you can slice them open easily and they are tender inside.Â

Spray each pie tin with cooking spray. Â

Slice open each baked potato and open it like a book. Place it into the prepared pie tin. Smash the baked potato down to cover the bottom of the pie tin. Smash two tablespoons of butter into each smashed potato. Season with salt and pepper.

Top the seasoned smashed potato with baked beans, pulled pork, and cheddar cheese (the amounts of toppings are ALL up to you). Â

Cover with tin foil and set aside until you're ready to eat!

When you're ready for dinner, heat these covered Pulled Pork Tater Pies in an oven, grill, or over a fire until heated through (about 30 min). Â

Before serving, squirt some extra BBQ sauce and sour cream on top and garnish with some chopped raw green onion. Enjoy!
