Poultry Protein Packed Potato Bowl

Description

This protein-packed bowl is loaded with seasoned garlic ground chicken, delicate sweet potatoes, smoky garbanzo beans, sauted fresh kale, sliced avocado, and drizzled with a healthy yogurt ranch dressing and tangy hot sauce. This meal will not only satisfy you, but will help you stay lean.

Instructions

  1. Preheat oven to 425° F

  2. Peel and chop your sweet potatoes into cubes and arrange on a sheet pan lined with parchment paper. Drizzle with olive oil and season with sea salt. Toss with your hands, then bake for about 15 min. Remove from the oven, flip the potatoes with a spatula, then return to the oven for another 15 minutes until cooked through and beginning to brown. 

  3. Add a little avocado or olive oil to a hot pan and add your ground chicken. Season your chicken with your garlic salt with parsley seasoning and cook until no longer pink and cooked through. Remove from pan. 

  4. In the same pan over high heat, add some more oil and then add your chopped kale. Season it with sea salt and pepper and sauté until the kale is wilted and just beginning to brown - just a few minutes. Remove from pan.

  5. In the same pan, add a bit more oil and then add your garbanzo beans that you have drained, rinsed, and dried off with paper towels. Season them with some smoked paprika and sauté until they get a little color to them.  Remove from pan. 

  6. Make your yogurt ranch dressing by combining your non-fat Greek yogurt, ranch dressing seasoning, and lime juice in a small bowl.  Set aside. 

  7. Slice up an avocado.

  8. Build your protein-packed power bowl by adding some chicken, sweet potatoes, garbanzo beans, and kale in sections in your bowl, then top it with sliced avocado, a healthy drizzle of yogurt ranch dressing, and some hot sauce if you desire. Now love your dinner and your waist line!
