Pesto Puff Pastry Pinwheels

Preheat the oven to 400 degrees. Line baking sheets with parchment paper or silicone baking mats.

Layout both sheets of puff pastry on a floured cutting board. Spread with pesto leaving a 1 inch border on all sides.Â

Lay the prosciutto slices on top, completely covering the pesto. Sprinkle with the Mozzarella and Parmesan cheeses.

Roll both sheets up tightly into logs. Cut the "ugly" ends off both of the logs, then slice each log into 1 inch thick slices and place the pinwheels 1 inch apart on the prepared baking sheets.Â

Bake for 15 - 18 minutes, or until golden brown. Serve warm or they are just as good room temperature!Â
