Irish Nachos | RECIPE

Description

Instead of tortilla chips, Irish nachos have homemade potato chips!  Topped with a beer cheese sauce, cubed up hot corned beef, caramelized cabbage and onions, green onions, and sour cream.  So delicious!

  1. Soak the potato slices in cold water for a couple hours, then drain and dry on paper towels. Fry in oil at 375 degrees until golden brown, then drain on racks until cool and crispy. Cube up some leftover corned beef and slice up 3 green onions. Add your sliced cabbage and onion to a hot pan with olive oil, stirring occasionally until caramelized. Season lightly with salt and pepper. To make the beer cheese sauce: Heat butter in large saucepan over medium heat. Add the flour and whisk until combined and cooked through, about 1 minute. Slowly add the beer, milk, mustard, garlic powder, paprika, salt and black pepper, whisking until everything is combined. Stirring constantly, cook until mixture has thickened slightly, about 3-5 minutes. Add cheese and whisk until smooth. To assemble the nachos, place some of your homemade potato chips onto a plate or platter, top with the corned beef cubes, then the caramelized cabbage and onions. Drizzle beer cheese sauce all over the nachos and top with sour cream and green onions. Enjoy!
