Homemade Calzones

Looking for an easy dinner idea on a busy week night? I was too and I decided to try my hand at making calzones! Turns out, they are very easy and fun to make, too! Make your own pizza dough, then stuff them with the ingredients of your choice! We made two different kinds: One variety was stuffed with Italian sausage, peppers, onions, pepperoni and cheese. The other variety was stuffed with Spinch, Italian sausage, mushrooms, garlic, onion, and cheese! They were both so good dipped in some warmed up marinara sauce!

To make the pizza dough, fill a small container with warm water (about 115 degrees F), and add 2 teaspoons of sugar. Stir until the sugar is dissolved. Then add two packets of dry active yeast. Stir again. The yeast will munch on that sugar and in about 10 minutes, the yeast will bloom.
In a food processor, add 4 cups of bread flour. Then add 2 teaspoons kosher salt. Once the yeast water mixture looks puffy and/or foamy, it’s ready…. Add that to the food processor bowl along with the olive oil. Process until a soft dough forms If it's still sticky, add extra flour a few tablespoons at a time and process.
Add olive oil to a large bowl, shape the dough into a ball and put in the bowl turning so all sides are oiled Cover with plastic wrap and let rise for an hour in a warm place until doubled in size.
Preheat oven to 450 degrees F.
Punch down the dough and separate into 6 oz. balls if you want to use the dough to make calzones, or into two equal sized balls if you want to make 2 sheet pan pizzas.
Cook up and prepare the fillings of your choice.
Flatten out a dough ball into a circle shape. Fill half the circle with the filling of your choice, wet the edges of the dough with water on your finger, then fold the dough over the filling and press down with fork tines to secure.Â
Brush each calzone with egg wash and bake in the oven until golden brown, about 10 min.
