Cut your cod filets into pieces that will fit on your buns. Make sure you dry off your fish as much as possible with paper towels to minimize extra moisture while frying.Â

Dip each piece of fish into the flour first, completely coating the fish and shaking off the excess flour, then dip it into the egg mixture, covering all sides of the fish, then coating the fish in panko bread crumbs. Set each breaded piece of fish aside on a sheet pan. Repeat until all fish is breaded.Â

Heat your oil to 350° F in a heavy bottom pan (I like to use cast iron) and make sure there is enough oil to come up each fish filet halfway in depth. Fry your fish until golden brown on both sides, then remove from pan and drain on a wire rack sitting on top of a pan or cutting board. Salt both sides of your fish immediately after frying to punch up the flavor.

To make your own tarter sauce, just combine your mayonnaise and relish. Add as much relish as you want to make it as tangy as you like.Â

After you're done frying your fish, discard the used oil and clean out your pan. In the same pan, melt your butter and toast the insides of your buns in the hot buttered pan.

To assemble your fish filet sandwiches, add one slice of cheese to the bottom buns, then place one or two pieces of fried fish on top of the cheese. Â

Add tarter sauce to your top bun and top your fish sandwich with the top bun. Enjoy!Â
