These Chicken Patty Melts are chicken burgers taken to the NEXT LEVEL.  You've had a patty melt with a beef burger, but why not a chicken burger bursting with flavor?  Make this today!

Chicken Patty Instructions:

  1. Heat a tablespoon each of extra virgin olive oil and butter in a large pan on medium low heat and add the peppers and onions. Saute, stirring about every 5 minutes for at least 30 minutes to allow the vegetables to caramelize. Once the vegetables are just about caramelized, season to taste with salt and pepper. In a large bowl, mix together the ground chicken, lemon pepper seasoning, Parmesan cheese, panko breadcrumbs, egg, and garlic paste until thoroughly combined. Created two 1/2 lb oval shaped patties out of the mixture. Put on a plate, cover, and refrigerate until you're ready to cook them so they have a chance to firm up a bit.

    Butter one side of all 4 slices of bread. Cook the chicken patties in about a tablespoon of olive oil in a large pan on medium heat - about 2 minutes per side until golden brown on both sides and the internal temperature reaches at least 165 degrees. Once the chicken patties are done, top each with two slices of pepper jack cheese. Remove from pan.

    In the same pan over medium heat, place two slices of bread butter side down into the pan. Spread some of the mustard sauce on each slice of bread. Top each with a cheese-topped chicken patty. Top each chicken patty with half of the pepper/onion mixture. Top each with the second slice of bread, butter side up. Flip each patty melt until both sides are cooked to a golden brown.

    Cut each patty melt in half to make four servings. Enjoy!

  1. Combine all ingredients in a small bowl.
