Chicken Parmesan

Description

Crispy breaded chicken cutlets smothered with fresh marinara sauce and melted cheese, served on a bed of spaghetti. It's a classic and comforting dish perfect for special occasions or an any-night dinner.

  1. Cover your chicken breasts one at a time with plastic wrap and with a meat mallet, pound out your chicken until it's about a 1/2 inch thick. Do this with both chicken breasts. 

  2. Setup your "breading station" with three large dishes: one with the flour and salt mixture, one with the scrambled eggs, and one with the two kinds of breadcrumbs mixed together. 

  3. To bread each chicken breast, dip each one into the flour and salt mixture, completely covering each breast.  Then dip them into the egg mixture, again completely covering each breast, then dipping them into the breadcrumb mixture completely coating each breast.  Set the breaded chicken aside.

  4. In a heavy bottom large pan, heat some light olive oil or oil of your choice to around 350 degrees Fahrenheit, then add each breaded chicken breast to the hot oil.  Fry on both sides until golden brown. 

  5. Preheat your oven to just 200 degree Fahrenheit. Place your fried chicken breasts in the oven just to keep them warm until ready to serve. 

  6. Remember to salt your pasta water, and boil your spaghetti noodles according to package directions. Drain your pasta and hit the noodles with a little olive oil and stir them so they don't stick together. 

  7. Heat your favorite jarred marinara sauce in a sauce pan on low heat.

  8. Plate your dish by placing a small pile of your olive-oiled noodles onto the plate. Lean a piece of fried chicken against the pile of noodles. Ladle a generous portion of the hot marinara sauce over the chicken and noodles.  Top the chicken with mozzarella cheese and melt with a kitchen torch if desired. Serve immediately and enjoy!
