BBQ RIBS (in the oven)

Preheat your oven to 375° F

Remove your rib racks from their packaging and pat them dry on both sides using paper towels.

Turn the rib racks meat side down and locate the silver skin... a tough, thin, translucent layer of connective tissue (elastin) on the bone side of a rack of ribs. It does not break down during cooking, often resulting in a chewy, rubbery texture and preventing seasonings from penetrating the meat. Removing it ensures more tender, flavorful ribs.

Next, combine all your rib rub ingredients together in a bowl until thoroughly combined. This should be just enough to rub all over the front and backs of all of your racks of ribs. Do that now.Â

Place your rib racks on sheet pans and pour about a 1/4 cup of apple cider vinegar into the bottom of each sheet pan. This adds moisture as well as helps to tenderize your ribs as they bake.

Cover your sheet pans tightly with aluminum foil and place into the oven to bake for 1.5-2 hours. Check them at 1.5 hours and remove them when the meat is cooked through and starting to fall off the bones.Â

While your ribs are baking, make your BBQ sauce. In a saucepan over medium heat, combine all the BBQ sauce ingredients and stir. Allow the mixture to come to a bubble, then turn the heat down to medium-low and let it simmer for about 20 minutes to thicken a bit. Then turn off the heat and you've got your BBQ sauce all ready to go when the ribs come out of the oven.

Once the ribs are cooked through, take them out of the oven and brush them liberally with BBQ sauce, then return them to the oven uncovered for about 20 minutes to bake the sauce into the ribs.Â

Now just cut the ribs apart into individual servings, plate them up and dig in! Serve any leftover BBQ sauce on the side. Yum!
