Bacon Taco

Description

Imagine a taco shell made entirely out of bacon! This is it and it is glorious!

  1. Preheat oven to 350°. Cover a small plate (salad or side plate sized) with parchment paper.  Make a bacon weave with 5 strips of bacon going lengthwise and 5 strips of bacon going cross-wise. 

  2. Using kitchen shears and the plate as a guide, cut the extra bacon and parchment paper off all around the plate so that you're left with a perfectly round, woven bacon taco tortilla.  

  3. Leaving the bacon on the parchment paper, hang the bacon taco tortilla directly from the oven rack so the sides dangle down, making sure to have a sheet pan on the bottom oven rack to catch all the dripping grease.  Roast in oven until cooked to desired doneness.  

  4. When one, remove the entire oven rack from your oven and set on top of your kitchen sink to cool and to allow the taco shell to crisp up.  

  5. Carefully peel off the parchment paper and serve filled with your favorite taco fillings.  I love to serve mine with cheesy scrambled eggs, avocado slices, and salsa.  Enjoy!
