Peel the potatoes, then cut them into fry-sized pieces. Store the cut potatoes in water until you're ready to fry them.

Before frying, drain your cut potatoes on paper towels to dry.

For the first fry, heat your oil to 325 degrees Fahrenheit. Fry the potatoes in batches for about 10 minutes, or until the fries are a golden yellow with just a tiny bit of browning on the very edges. They will almost look slightly wrinkled.

Remove the fries from the oil onto a wire rack to rest.

Increase the temp of the oil to 370 degrees Fahrenheit, then return the fries to the oil for their second fry. Fry them only for about 5 minutes, or until they are a deep golden brown color.

Remove the fries from the oil again and drain on a wire rack. Season them immediately with a generous amount of salt. Serve immediately to enjoy them at their crispiest.
