Split Pea Soup with Ham

Heat olive oil in a large pot over medium-high heat. Add onion and celery and sauté until translucent and tender. Add garlic and sauté 1 minute longer.Â

Pour in chicken broth and water. Add split peas, bay leaves and thyme. Season lightly with salt and with pepper to taste (add more salt at the end only if needed).

Add meaty ham bone to the soup. Bring the soup to a boil, then reduce to low. Cover and let simmer, stirring occasionally until peas and ham are tender, about 60 minutes.

Remove ham from soup, let rest until cooled off enough to handle, then remove meat from the bone. Chop up the meat into bite sized pieces and set aside.Â

Add carrots to the soup. Cover and continue to simmer, stirring occasionally, until peas have mostly broken down, about 30 minutes longer.Â

Right before serving, stir the ham into the soup. Taste the soup with the ham and add more salt if needed. Serve garnished with chopped fresh parsley and some crusty bread on the side.Â
