Preheat your oven to 400° F
Prep your jalapenos by cutting off the stems, cutting the jalapenos in half, then removing the ribs and seeds.
Arrange your jalapenos on a sheet pan and spray them with a little olive oil.
On the same sheet pan, add your strips of bacon. You may need to use an additional sheet pan if you need the extra room. Roast your jalapenos and bacon in the oven around 12 minutes or until your bacon is browned and crispy.
Remove the bacon and jalapenos from the sheet pan and chop up your roasted jalapenos.
Combine your cream cheese, garlic powder, onion powder, and roasted jalapenos (about 4 tbsp) in a small bowl and stir.
Butter one side of all of your bread slices.
In a hot pan, add your first slice of bread butter side down. Top with 2 slices Pepper Jack cheese and 2 slices Sharp Cheddar cheese, then add 3 strips of crispy bacon. Spread a heaping tablespoon of your cream cheese mixture to another slice of buttered bread (on the not-buttered side), then place it on top of your sandwich, cream cheese side down. By now it should be time to flip your sandwich. Fry your sandwich, flipping it as much as you need to, until it is golden brown on both sides.
Cut your sandwich in half and enjoy the cheesy, spicy goodness!
