Description

A Bite-sized Twist on a Classic Favorite! Transform dinner rolls into the perfect bite-sized vessels for delicious, mini meatball subs!

Instructions

  1. Cut around the top of each dinner roll and hollow out the bread from the center. Set dinner roll "innerds" aside. Set hollowed out dinner rolls onto a sheet pan.

  2. Finely chop up all dinner roll innerds to be used as the bread crumbs in the meatball mixture. You will need 3.5 cups of breadcrumbs for the recipe, so you will probably have some extra bread for snacking. 

  3. In a large bowl, combine the meatloaf mixture (ground beef and pork), 3.5 cups of the fine chopped bread (from inside the dinner rolls), 1 cup finely grated Parmesan cheese, 2 scrambled eggs, 3 garlic cloves ran through a garlic press or finely minced, 2 tablespoons finely chopped fresh parsley, 1.5 cups water and salt and pepper to taste. 

  4. Mix together the meatball mixture with your hands until thoroughly combined. 

  5. Using a small scooper, scoop about 2 tablespoons of the meatball mixture into your hand and form in a ball. Set aside on another sheet pan. Do this until you've used up all the meatball mixture.

  6. In a large heavy bottom pan with deep sides over medium-high heat, add the olive oil. Once the olive oil is hot, add the meatballs in batches and brown on all sides. Remove meatballs from the pan and once all meatballs are browned, discard the remaining grease from the pan. 

  7. Return the pan to the stove over medium heat. Add all of the cooked meatballs back to the pan and pour a jar of your favorite marinara sauce over the meatballs. Stir the meatballs and sauce to combine, then cover the meatballs with a lid and simmer for 10 minutes. 

  8. Preheat your oven to 350 degrees Fahrenheit.  

  9. Add 3 meatballs to every hollowed out dinner roll. They will barely fit, but move the meatballs around to help them nestle down into the rolls. Spoon some extra sauce over the meatballs in each roll. Top each mini meatball sub with a half slice of mozzarella cheese. 

  10. Bake for 10 minutes, then enjoy!
