Description

Sheetz Mac and Cheese Bites… but better! Teenagers practically live at Sheetz, fueled by mac and cheese bites and questionable energy drinks. But what if you could lure them back to your kitchen with something even better? I'm taking those beloved little triangular cheese bombs and cranking them up to 11—extra cheesy, extra crispy, and guaranteed to make your kids wonder why they ever left the house in the first place. Forget car rides to Sheetz; this recipe will have them running back home (and maybe even doing the dishes… maybe).

  1. In a glass dish, press your leftover mac and cheese into an even layer.  Cover with plastic wrap and refrigerate until mac and cheese is cooled and solidified. 

  2. When you are ready to make your Mac and Cheese Bites, using a spatula, remove the leftover mac and cheese from the glass dish in one big piece onto a cutting board. 

  3. Cut the leftover "block" of mac and cheese into triangle shapes (or any shape you want). Work quickly as the mac and cheese will hold together for you best when cold. 

  4. Bread each mac and cheese bite by first covering it in flour, then dipping it into the scrambled eggs, letting the excess drip off, then coating it with Panko bread crumbs, then placing it onto a sheet pan.  Do this until you have breaded all of your mac and cheese bites. Place your breaded mac and cheese bites into the refrigerator for about 30 minutes to allow them to cool back down and firm up.

  5. Meanwhile, heat some light olive oil in a large pan to 350° F.  Place a wire rack on top of a cutting board - this is where you will place your mac and cheese bites to cool after frying.

  6. After 30 minutes, remove your mac and cheese bites from the refrigerator and fry them in the oil until golden brown on all sides.  Place your mac and cheese bites onto the wire rack to cool after frying.  

  7. Make sure to generously dust each mac and cheese bite with the nacho cheddar popcorn seasoning as soon as they are done frying to add that final touch of color and pop of flavor.  Serve immediately.
