Hard boil your eggs: bring enough water to cover the eggs to a boil, then slowly lower your eggs into the boiling water and turn it down to a simmer.Â

Cook the eggs in the hot simmering water for 13 minutes, then immediately plunge them into an ice bath to stop the cooking. By cooking them starting with boiling water and ending with the ice bath, they will be quite easy to peel.

Peel the shells off the eggs and sliced each egg in half.

Pop the yolk out of each egg half into a bowl and set the egg white aside on a platter.Â

In the bowl with the egg yolks, add the mayo, mustard, hot sauce, salt and pepper. Mash up all the ingredients, then stir until creamy.

Pipe the egg yolk mixture into all the empty egg whites using the plastic baggie method (putting the mixture into a sandwich bag, sealing the bag, then snipping off the corner and using it like an icing piping bag to easily transfer the yolk mixture into the egg whites).

Now that you have your basic deviled eggs done, you could either stop here and enjoy, maybe sprinkle them with a little paprika, or you could try some of these topping variations to jazz them up:

"Everything Bagel" - sprinkle the with Everything Seasoning and top with a piece of smoked salmon
"Buffalo" - drizzle buffalo sauce, sprinkle on some crumbled bleu cheese and diced celery
"Pimiento Cheese" - add extra sharp cheddar cheese and diced pimiento peppers
"Pickled Jalapeno and Bacon" - top with diced pickled jalapenos and crumble fried bacon
