Beef and Black Bean Empanadas

Description

A homemade, flakey, buttery crust stuffed with a delicious mix of beef, black beans, cheese, vegetables, herbs and spices.  Paired with a spicy chipotle lime sauce, it tickles your taste buds in the most wonderful way!

For the dough

  1. Add the flour and salt to a large bowl.  Stir to combine.

  2. Next add the cold butter cubes to the flour mixture and squish and mix with your hands until the flour and butter create a cornmeal-like feeling mixture.  

  3. Crack an egg into a separate bowl, then add the water and vinegar.  Scramble it all up.  Then add it to the flour and butter mixture.  Stir to combine.

  4. Sprinkle some flour onto a cutting board, then turn the dough mixture out onto the floured board.  Gather it up and smoosh together with your hands, working it and kneading it until it forms a dough.  

  5. Form the dough into a couple inch thick square shape, then wrap in plastic wrap and chill in the fridge for up to an hour. 

For the filling

  1. To a pan over high heat, add the olive oil, ground beef, and all the other filling ingredients (except for the cheese). Stir to combine and sauté until the meat is browned. Remove from the heat and set aside.

To assemble and bake the empanadas

  1. Cut your chilled dough into 12 even sections.  Roll each section into a ball, then flatten into a circle shape on a floured cutting board. 

  2. Next, flour your rolling pin and roll the circle of dough out until it's thin. 

  3. To the center of the dough circle, add some cheese, then a couple spoonfuls of the beef and bean filling.  

  4. Fold the dough over the filling until it meets the other side of the dough circle.  Press the edges of the dough together first with your fingers to create a half moon shape.  Then, using a fork, press down along the edge of the dough to crimp it shut to create your empanada.  Set your completed empanada aside on a sheet pan.  Repeat until you've made 12 empanadas.

  5. Bake the empanadas in a 400 degree F oven for 25 minutes or until they are golden brown.

For the chipotle lime sauce

  1. Add all ingredients to a food processor or blender and blend until smooth.  Serve alongside your hot and ready empanadas.  Enjoy!
