We finally got a chance to use our new deep fryer last night and made some spectacular fries using the double frying method. Your first fry should be done at around 360 degrees F until they reach a light golden color – not browned yet. Remove them from the oil at this point and let them drain on a wire rack while you crank the heat of your oil up to 375 degrees F. Once your oil is at the higher temp, return your fries back to the oil and fry them for just a couple more minutes or until they are a golden brown in color (or to your desired doneness). Remove them from the oil again and return them to the wire rack and salt them immediately. Best fries I’ve ever made at home! I will do a video soon showing you this method. The other great thing about this fryer, besides doing a great job keeping the right temp and having a nice sized fry basket, is that once the oil is cooled, I’m able to filter it into the bottom container so I can reuse it!
